Had never heard of trumpet royale mushrooms, so in they went. Fun ingredient.

Mirepoix: red onion, celery, carrot, fresh parsley. Flank steak, top round steak, roasted yellow squash, butternut squash, red green and orange bell peppers, peanut butter, cauliflower, chopped almonds, chives, worcestershire sauce, clove, cinnamon, cumin, coriander, garlic, honey

Mirepoix: onion, parsnip. Red bell pepper, eggplant, purple kale, broccoli, Harissa (Moroccan green pepper sauce), cumin, oregano, ginger, garlic.
The Harissa really had a kick to it.

Mirepoix: yellow onion, celery, those funky organic rainbow carrots. Beef, asparagus, zucchini, tomato, raisin, crimini mushroom, turmeric, coriander, garlic, cayenne pepper, cinnamon, lime juice.
Pureed the shrooms with the mirepoix.

Clients and staff liked this one a lot, and it was great to work with real beef that wasn’t ground and fatty.
