Ham and Green Bean Soup

Mirepoix: red white and yellow onion, celery, parsnip. Ham, green bean, tomato, heart of palm, fresh basil, garlic, cumin, vanilla, cayenne pepper, paprika, parsley, soy sauce.

I was aiming at a ham version of fasoolya khadra, a Jordanian dish, but it didn’t quite get there. Oh well. At least the vanilla added an unexpected tickle.

“Let me tell you, I’m no Elvis. Elvis had his time. I’m Vanilla Ice, and it’s my turn now.” Who else?

Chicken and Roasted Onion Soup

Mirepoix: yellow onion, carrot, celery, parsnip. Chicken breast, balsamic roasted onion, regular roasted onion, rutabaga, turnip, beef bouillon, garlic, black pepper, French 4 spice (clove, nutmeg, ginger), lemon/ginger burst juice, bay leaf.

Lordy those roasted onions added a depth further than a zen bomb shelter. Plus it was fun to use rutabaga–we rarely have those donated to us.

Spicy Bratwurst and Black Bean Soup

Onion, carrot, celery, bratwurst, black bean, raisin, tomato, tomato sauce, green pepper, salt, black pepper, cumin, Italian seasoning, cayenne.

The cayenne was close to landing a knock-out heat punch, but the raisins totally evened it out. Another home run delivered by Michele.

"The Farm" Soup

Mirepoix: red onion, celery, carrot. Bacon, beef, chicken, yellow squash, beet, shroom, blueberry, mandarin orange, horseradish, white onion, beef bouillon, turmeric, white pepper, fresh basil.

Martin scoured the farm for this one: bovine, porcine, and avian protein included. Plus some nice fruit. Excellent.

Ham Egg Drop Soup

Mirepoix: red onion, celery, organic carrot, fresh garlic. Ham, egg, red and green bell pepper, corn, cream corn, corn starch, ginger, lemon ginger burst juice, black pepper.

Another one of those, “why the heck not” soups–hadn’t heard of protein in an egg drop soup before, so had to try it. Turned out pretty pleasant.
