Avgolemono (Greek Chicken Rice Soup)

Jpeg

Standard mirepoix. Prepared breaded chicken breasts, egg yolks, calrose rice, fish sauce, dill, lime juice.

Ok ok, there was no lemon, but cut me some slack–lime works as well, doesn’t it?

Four dozen egg yolks went into this hellenistic brew.

Potato Fish Meshuganah Soup

Jpeg

Onion sweated in ghee, gefilte fish, potato, matzo, garlic scape, egg, black pepper, paprika, lemon juice, sugar.

Gather round ye Israelites and gentiles, Martin has made another another scrumpy soup. Although as he notes, gefilte fish was enjoyed through the Balkans and central Europe as a soup of celebration.

The fish cakes and potatoes melted into the broth just like the face of that Nazi in Raiders of the Lost Ark.

Carbonara with Asparagus Soup

Jpeg

Mirepoix: yellow and red onions, organic rainbow carrot, green bell pepper. Ham, asparagus, egg, milk, romano cheese, asiago cheese, garlic, lots of black pepper, cinnamon, fish sauce.

Thinner than I meant–needed another dozen egg yolks. Lesson learned, but it did taste a bit carbonaraish. Will try some other egg soups in the future.

And pay no attention to the that man behind the curtain, nor the shadow on the soup.
