Boiled egg, mayonnaise, traditional basil pesto, harissa (North African hot chili paste) red bell pepper, red onion marinated in balsamic vinegar, green onion, lemon/ginger juice, garlic, salt.
As I mentioned in previous post, we haven’t been able to make and distribute soup due to the Grande Praga. But today we needed some sandwich filling (we still hand out sack lunches), so I added some funkiness to the customarily subdued egg salad.
Had to be careful with the harissa–that stuff can bring atomic heat if unsparingly added. The pesto really made it fun. Huzzah!

Due to social distancing requirements, we have not been able to make and hand out soup. Totally sucks, but our clients’ safety is paramount. BUT we still hand out sack lunches, so today I made a couple sandwich fillers.
As with soups, I can’t help myself from jazzing up the same-o same-o. The hollandaise supplied a great tartiness, while the kalamatas stood up perfectly.
