Heitor’s Sausage Soup

Mirepoix: red onion, celery, carrot. Pork sausage, zucchini, yellow squash, sauteed crimini mushroom, black olive, fresh and canned tomato, enchilada sauce, cumin, garlic, red pepper flake, cocoa powder, cinnamon, clove, parsley, coffee.

The earthy tones of the coffee deepened this nicely.

A lot of good flavors swimming in this offering by Martin. I like the addition of sausage grease–good stuff.

Mexi-Filipino Ham Noodle Soup

Standard mirepoix. Ham, pancit noodles, zucchini, Brussels sprouts, verde salsa, pico de gallo, garlic, cinnamon.

In previous posts I said I used fresh ramen, but today Lita, a volunteer from the Philippines, explained that they were pancit, filipino noodles. Most excellent to find this out.

Chipotle Pineapple Chicken Ramen

Mirepoix sweated in ghee.

We’re so used to dry ramen, you know, the staple of every drunk dorm dweller. Having it fresh was totally cool.

Had a fun little cross-border vibe.

Standard mirepoix. Cod, green and yellow zucchini, Tostitos Fiesta Bowl bean dip platter, red and orange bell peppers, yogurt, jalapeno relish, Juanita’s Fiesta Bag of corn chips, cumin, paprika, cayenne pepper, garlic.

Eeek ugly picture. Oh well, at least it tasted good!

Mirepoix: yellow onion, red and green bell pepper, carrot. Roasted mushroom, potato, corn, cream corn, zucchini, parmasen cheese, fire roasted corn salsa, nacho salsa, garlic, fish sauce.

Probably should have added some potato starch.

The only soup we have to fear is soup itself“.

Montezuma’s Chicken Mole Soup

Mirepoix: red, yellow, and white onion, carrot, green pepper. Black beans, corn, tomato (both fresh and canned), figs, jarred mole sauce, chicken breast and thigh, glace de poulet (roast chicken stock), sugar, garlic, salt

The lid on the mole sauce wouldn’t come off, so I had to knife through the top. To little avail, as the sauce had hardened at the bottom of the jar. Had to dig it out with a spoon. Oh well.
