Chiyonofuji’s Ham Noodle Soup

Mirepoix: yellow red and white onion, carrot, yellow bell pepper. Ham, kale, pancit (Filipino noodles), chanko nabe soy soup base, tamari, garlic, instant miso soup mix.

Martin was busy this Christmas morn, so I made two hammy soups.

Chiyonofuji was a grand champion sumo wrestler who, in addition to winning countless tournaments, served as the cook for his stable of wrestlers. Often he’d make chanko nabe, this crazy medly that sumo wrestlers are keen to eat, due to the heavy protein content. Although mine isn’t nabe, it’s got a good nabe base. 美味い!

Coconut Beef Ramen Soup

Mirepoix: yellow onion, fresh garlic, celery, poblano pepper. Ground beef, flank steak, asparagus, coconut milk, coconut flakes, fish sauce, ramen noodle, ginger, curry powder, cinnamon.

Sort of an Asian feel.

Mexi-Filipino Ham Noodle Soup

Standard mirepoix. Ham, pancit noodles, zucchini, Brussels sprouts, verde salsa, pico de gallo, garlic, cinnamon.

In previous posts I said I used fresh ramen, but today Lita, a volunteer from the Philippines, explained that they were pancit, filipino noodles. Most excellent to find this out.

Chipotle Pineapple Chicken Ramen

Standard mirepoix. Chicken, roasted red pepper, zucchini, garlic, Frontera chipotle pineapple marinade, fresh ramen, pineapple.

Mirepoix sweated in ghee.

We’re so used to dry ramen, you know, the staple of every drunk dorm dweller. Having it fresh was totally cool.

Had a fun little cross-border vibe.
