Pesto and Harissa Egg Salad

Boiled egg, mayonnaise, traditional basil pesto, harissa (North African hot chili paste) red bell pepper, red onion marinated in balsamic vinegar, green onion, lemon/ginger juice, garlic, salt.

As I mentioned in previous post, we haven’t been able to make and distribute soup due to the Grande Praga. But today we needed some sandwich filling (we still hand out sack lunches), so I added some funkiness to the customarily subdued egg salad.

Had to be careful with the harissa–that stuff can bring atomic heat if unsparingly added. The pesto really made it fun. Huzzah!

Artemis Chicken Soup

Mirepoix: red onion, carrot, celery. Grilled chicken breast, chicken pate, crimini mushroom, oyster mushroom, Swiss chard, roasted eggplant, zucchini, fresh mint, tomato bouillon, garlic, cumin, fresh basil, worcestershire sauce, feta cheese, green olive, tomato paste, pesto.

The Greek goddess of wilderness, wild animals, and hunting. Isn’t something wrong when the goddess of animals is also the goddess of hunting?

Mushroom Sausage Soup

Standard mirepoix. Mushroom, chicken andouille sausage, pesto, hondashi.

Pureed a bunch of shrooms with the mirepoix one it was properly sweated. Roasted some of the shrooms.

When the men on the chessboard get up and tell you where to go. And you’ve just had some kind of mushroom, and your mind is moving low. Go ask Alice, I think she’ll know.”

Sausage Tomato Bisque

Mirepoix: yellow onion, yellow bell pepper, parsnip, garlic. Tomato, Mole Salami from Salumi, calrose rice, tomato sauce, milk, ginger, turmeric, truffle pesto, worcesterhire sauce.

The truffle pesto was powerful. Powerful like bull. After testing just a bit of it, the flavor was with me for a couple hours. Didn’t need to use too much.

After sweating the mirepoix, I added water, some bouillon, and rice. Once the rice was cooked, I pureed the mixture. Gave the soup a nice silkiness. Fun had by all.
