Mirepoix: white onion, celery. Ground beef (browned with turmeric and dill), zucchini, baby kale, red pepper, garbanzo beans, cannellini beans, sheep yogurt, mint, lime juice, garlic.
Can only hope Mustafa would approve.

Mirepoix: yellow onion, celery. Brussels sprouts, eggplant, Greek yogurt paprika, mint, cumin, coriander.
Finally had celery for the mirepoix, but no carrots! We’re totally at the mercy of our food donors, and sometimes they don’t donate some of the basics. The mint gave a nice brightness to offset the cumin and coriander.

Mirepoix: yellow onion, celery, poblano pepper (almost the Cajun Holy Trinity). ground turkey, roasted eggplant, hondashi (bonito bouillon), garlic, sage, garlic, salt, pepper.
Bonito broth adds awesome umami. Fairly simple, but tasted good. Made 9/12/18
