“The Farm” Soup

Mirepoix: red onion, celery, carrot. Bacon, beef, chicken, yellow squash, beet, shroom, blueberry, mandarin orange, horseradish, white onion, beef bouillon, turmeric, white pepper, fresh basil.

Martin scoured the farm for this one: bovine, porcine, and avian protein included. Plus some nice fruit. Excellent.

Bacon Rice Soup with Mint

Mirepoix: yellow onion, parsley, carrot, celery, green pepper. Bacon, rice, zucchini, crimini shroom, fresh mint, tarragon, sambal oelek, vegetable base, lemon ginger burst juice, black pepper.

Ouu boy that mint really brightened up this concoction, and the Indonesian pepper sauce added some softly-refined heat.

Kale and Bacon Soup

Mirepoix: yellow onion, celery, red bell pepper. Bacon, kale, bok choy, yogurt, extra onion, ginger, cayenne pepper, coriander, cumin, lemon/ginger juice.

So this train derailed–it was originally headed toward saag station, and just never got thick/mushy/creamy enough. But the pureed kale really infused the stock wonderfully, so I just threw in some bok choy too and called it a day.

Bacon Rice Soup

Bacon, rice, broccoli, zucchini, celery, fresh basil, white pepper, sambal oelek.

The city opened a new cold-weather shelter nearby, and we’ve been swamped. Thus I stayed late and whipped this little devil together. It was extra thick and flavorful, so it likely will be cut into two soups tomorrow.

Bacon, Potato and Cabbage Chowder

Carrot, celery, onion, turkey bacon, potato, cabbage, milk, half and half, garlic, salt, black pepper, butter, Italian seasoning.

A perfect January chowder put together by Michele.

Bacon and Roasted Vegetable Soup

Mirepoix: onion, celery, bell pepper. Bacon, roasted cauliflower and roasted Brussels sprouts (both roasted in bacon fat), rice, mixed green herbs, onion, vinegar, salt, paprika, bell pepper, worcestershire sauce, corn starch.

Another New Year’s Day special slung out by Martin. Awesome move to roast in bacon fat. Yum.

Sweet and Sour Ham Soup

Mirepoix: red yellow and white onion, carrot, celery, red bell pepper. Uncured ham, Canadian bacon, bacon, asparagus, soy sauce, sweet and sour sauce, apple vinegar, honey, garlic.

Huzzah for anything porcine.

Bacon Potato with Mushroom Soup

Mirepoix: red onion, orange bell pepper, carrot. Bacon, salumi soppressata, mole salami, potato, porcini mushroom gravy, cinnamon, garlic, beef stock

Very very umami. Yum.

Coconut Meat and Asparagus Soup

Mirepoix: yellow onion, carrot, yellow bell pepper. Stew meat, bacon, turkey bacon, asparagus, coconut flakes, Mike’s Organic Curry Love Massaman, coconut milk beverage, worcestershire sauce, garlic

This is one of the meals Maryann made, followed naturally by a desert of coconut cream pie.

Grosse Suppen

Mirepoix: yellow onion, rainbow carrot, celery. Bacon, sausage, pepperoni, sauerkraut, potato, apple, more onion, more carrot, paprika, dill, radish tops.

So tangy, a great mix made by Martin. Makes you think you’re in Central Europe.

Bacon Chowder with Peach and Mango

Mirepoix: yellow onion, celery. Thick cut bacon, white shroom, red and white potato, milk, peach, mango, mashed potato mix, turmeric, ginger, garlic.

Whoo boy this was good fun–just a touch of sweetness from the fruit. Huzzah! Forth Eorlingas!

Bacon and Chorizo Mac and Cheese Soup with Pureed Pork Pâté

Onion, celery, bacon, chorizo, pork pâté, green olive, elbow macaroni, cheese powder, mozzarella cheese, whipping cream, flour.

Pureed the pâté with the onion and celery– a super meaty base. Turned out pretty good. Maybe should have added some tabasco.

Miscellaneous Meat Stew

Standard mirepoix. Stew beef, bacon, weisswurst, potato, tomato, potato starch, brown sugar, chardonnay vinegar, rosemary, cumin, cinnamon, chili powder.

Meat Burrito Soup

Mirepoix: yellow onion, rainbow carrot, green bell pepper. Mushroom, refried beans, black beans, red onion, salsa, tomato, bacon, sliced ham, fish sauce, wheat tortilla pieces, garlic, taco seasoning, cumin, chili powder.

Pureed a bunch of mushrooms with the mirepoix, just to add more umami.

I own this shirt. Although I don’t look as dapper as he.

Mediterranean Barley Soup

Mirepoix: yellow onion, garlic scape, carrot. Tomato, roasted red bell pepper, tzaziki dip, spinach dip, Tuscan white bean puree, barley, fennel salami, bacon, Anaheim pepper, radish, extra garlic scape, paprika, worcestershire sauce, garlic, sugar.

Martin made this tantalizing concoction. As usual, we use what’s available, even if a bit unusual, hence the dips. Worked out perfectly.

Bacon and Black Rice Soup

Mirepoix: red onion, carrot, garlic scape. Bacon, black rice, roasted red bell pepper, kale, mushroom, blackcurrant mustard, honey, worcestershire sauce, roasted chicken demi-glace, garlic.

Black rice, “black as night, black as coal.”

The blackcurrant mustard was the star.

Turkey Bacon and Chicken Soup

Red onion, carrot, garlic scape, turkey bacon, chicken, broccoli, funky rice, milk, black pepper, cumin, coriander.

Michele did a good job on this one. I love the mix of protein. Two types of rice used. A bowl of love.

Bacon Chowder with Fennel, Okra, and Tarragon

Standard mirepoix. Bacon, okra, fennel, potato, pobalano pepper, half and half, fish sauce, parsley, minced garlic, garlic scape, cream cheese, tarragon, glace de poulet, love.

The slick sliminess of okra. Such a joy, such a love.

Had never heard of garlic scape before, but holy smokes this is a killer ingredient. Tanta alegria e tanto amor. Que bom.

Bacon Squash Chowder

Mirepoix: yellow onion, celery. Bacon, roasted butternut squash, corn, hondashi, half and half, turmeric, paprika, garlic.

Used the rendered bacon fat to sweat the mirepoix.

Deng’s Sausage and Rice Soup

Mirepoix: yellow onion, carrot, red bell pepper. Hot Italian sausage, eggplant, canned bacon, snap peas, rice, quinoa, oyster sauce, soy sauce, garlic, roasted chicken stock, lime juice, worcestershire sauce, fresh basil, dried basil, allspice.

Never heard of canned bacon, so forthwith in it went. It was really weird–slices of cooked bacon wrapped in paper and stuffed into a can. Go figure.

In Tokyo I bought a Deng watch. Instead of the second hand going around, the seconds were marked by Deng waving his cigarette.

Bacon Pozole Soup

Standard mirepoix. hominy, bacon, okra, tomato, poblano pepper, pinto beans, kidney beans, sun-dried tomato paste, oregano, cumin, garlic.

First time I’ve seen hominy at the food bank, so had to use it.
