Kale and Bacon Soup

Mirepoix: yellow onion, celery, red bell pepper. Bacon, kale, bok choy, yogurt, extra onion, ginger, cayenne pepper, coriander, cumin, lemon/ginger juice.

So this train derailed–it was originally headed toward saag station, and just never got thick/mushy/creamy enough. But the pureed kale really infused the stock wonderfully, so I just threw in some bok choy too and called it a day.

Chiyonofuji’s Ham Noodle Soup

Mirepoix: yellow red and white onion, carrot, yellow bell pepper. Ham, kale, pancit (Filipino noodles), chanko nabe soy soup base, tamari, garlic, instant miso soup mix.

Martin was busy this Christmas morn, so I made two hammy soups.

Chiyonofuji was a grand champion sumo wrestler who, in addition to winning countless tournaments, served as the cook for his stable of wrestlers. Often he’d make chanko nabe, this crazy medly that sumo wrestlers are keen to eat, due to the heavy protein content. Although mine isn’t nabe, it’s got a good nabe base. 美味い!

Japanese Beef Kale Soup

Mirepoix: yellow and red onion, rainbow carrot, green bell pepper. Sirloin, tri-tip, New York steak, kale, shiitake shroom, togarashi (red pepper, sesame seed, paprika, coriander, seaweed, orange and lemon granules), soy sauce

Togarashi is good fun, also known as “shichimi” or seven flavors.

Bottom of the Box Shroom Soup

Standard mirepoix. Portobello mushroom, crimini mushroom, kale, kumamoto tomato, bacon, canned salmon, sweet mozzarella cream cheese, paprika, garlic, ginger, chive, fresh basil.

Martin crammed so many mushrooms in this that it practically exploded. A really great flavor.

Nutty Barley Soup

Chicken stock, barley, chopped almonds, peanut butter, kale, carrot, roasted red bell pepper, fish sauce, roasted chicken demi-glace, cayenne pepper, paprika, Tuscan white bean puree spread.

At times the boss man needs a super quick and easy soup when customer flow is heavy (sometimes it’s as simple as broth and canned chicken). So as my second soup of the day, I splashed this one out.

Basically throw ingredients into a pot and heat. But I just had to have some fun with it, hence the nuts.

“The Germans have sent some people forward to take our surrender.”  Brig. Gen. McAuliffe replied, “nuts”.

Turkish Beef Soup ala Ataturk.

Mirepoix: white onion, celery. Ground beef (browned with turmeric and dill), zucchini, baby kale, red pepper, garbanzo beans, cannellini beans, sheep yogurt, mint, lime juice, garlic.

Can only hope Mustafa would approve.
