The gherkins were right up front in Martin’s concoction. Let’s say “tamed tartness”.

Super chunky soup made by Martin. Available were these bags of salsa verde with pork bits, so in it went.

I first encountered potage in Tokyo, where it’s quite popular. Seemed a nice simple corn soup that I could jazz up a bit.

Mirepoix: yellow onion, poblano pepper, bell pepper, carrot. Brussels sprouts, roasted corn, roasted zucchini, fresh rosemary, lime juice, garlic.
Doesn’t look like much, but it wasn’t too bad. The lime juice really brightened it up.
