Pippin Chicken and Sam Clam Soup

Mirepoix: yellow onion, carrot, celery. Taco chicken breast, cento red clam sauce, poblano pepper, green and red bell pepper, cabbage, zucchini, black truffle oil, parmesan cheese, garlic, basil, sugar.

The clam sauce was a great find–tasted in the vein of Manhattan chowder. The taco marinade on the prepared chicken slices had cayenne and other usual Mexi flavors, but was fairly subtle.

Rangoon Chicken Mushroom Soup

Mirepoix: yellow onion, celery, carrot. Tyson grilled and ready chicken breast, sautéed white and crimini shrooms, sautéed portobello shroom, cauliflower, green snap beans, roasted zucchini, roasted eggplant, raisins, yellow curry paste, fresh basil, lemon/ginger burst juice, fish sauce.

We were donated a couple cases of yellow curry paste, so you may see more Asian-inspired offerings in the near future.

Chicken with Roasted Grape Soup

Mirepoix: red onion, celery, carrot. Chicken breast, roasted grape (with a dash of white balsamic vinegar), red bell pepper, sauteed crimini shroom, zucchini, herbs de provence, sugar, garlic, red pepper flake, flour.

AKA Coq au Raisin. Got a hankering to make coq au vin, but considering our clientele, it’s best to stay away from booze, even if it mostly boils out. So roasted grapes did a fine stand in. No wrath here.

Roasted chicken, canned pumpkin, romano cheese, yam, sweet potato, carrot, Anaheim pepper, green onion, onion, kale, cranberry, mashed potato mix, mushroom pate, truffle oil, ginger, cinnamon, corn starch, chicken bouillon, sugar, white pepper, malt vinegar, molasses, lemon juice, parsley.

Martin had a whole lotta lovin mixed into this one, but the pumpkin was up center. Good stuff.

Chicken and Roasted Onion Soup

Mirepoix: yellow onion, carrot, celery, parsnip. Chicken breast, balsamic roasted onion, regular roasted onion, rutabaga, turnip, beef bouillon, garlic, black pepper, French 4 spice (clove, nutmeg, ginger), lemon/ginger burst juice, bay leaf.

Lordy those roasted onions added a depth further than a zen bomb shelter. Plus it was fun to use rutabaga–we rarely have those donated to us.

Mirepoix: red onion, celery, carrot. Bacon, beef, chicken, yellow squash, beet, shroom, blueberry, mandarin orange, horseradish, white onion, beef bouillon, turmeric, white pepper, fresh basil.

Martin scoured the farm for this one: bovine, porcine, and avian protein included. Plus some nice fruit. Excellent.

Almond Chicken Soup with Mango and Morrel

Wasabi Chicken Noodle Soup

Wasabi in chicken soup? Heck yeah!

Just a note: I’ve been sweating the mirepoix in coconut oil for the past half year or so. Certainly olive oil, bacon fat, butter, or other fats work great.

Banzai Chicken Rice Soup

Red onion, chicken, kale, eggplant, shiitake mushroom, rice, liquid aminos, nori komi furikake (Japanese seasoning), lemon ginger burst juice.

Martin was out, and once again we were swamped, so this day I made three soups. This was the quick and dirty third soup, but with some fun Japanese flavors.

Had never seen lemon ginger burst juice before, but it worked perfectly, adding a nice acidic touch.

Lotus Ginger Chicken Soup

Mirepoix: Onion, celery, bell pepper. Lotus root, chicken, eggplant, various types of shrooms, rice thread noodle, bonito flakes, vinegar, salt, sugar, diced fresh ginger, basil, lime leaf, Japanese curry nabe mix, corn starch.

Martin goes to Asia on this New Year’s Day soup. I love the use of bonito flakes.

A lot of good flavors swimming in this offering by Martin. I like the addition of sausage grease–good stuff.

Gherkin Chicken Soup

Madras Chicken Lentil Soup

I found a fun Swedish fish recipe that was chowdery but also had tomato paste in it too. Sounded fun, so I tried it with chicken. I pureed the mirepoix for a little thickness.

Chicken Bean Soup with Artichoke Hearts and Mozzarella

Chipotle Pineapple Chicken Ramen

We’re so used to dry ramen, you know, the staple of every drunk dorm dweller. Having it fresh was totally cool.

Had a fun little cross-border vibe.

Avgolemono (Greek Chicken Rice Soup)

Asian Chicken Soup

Mirepoix: yellow onion, red bell pepper, carrot. Rotisserie chicken, canned chicken, zucchini, leek, broccoli, portobello mushroom, hondashi, garlic, Lemon Good Health Vinegar, fresh ginger, fresh basil, soy sauce.

Never start a land war in Asia.

Fresh ginger was the key. Not too bad.

Was pretty sweaty in the kitchen. Had to bring out portable fans to combat the sultry atmosphere.

Chin’s Chicken Vegetable Soup

Mirepoix: white onion, celery, poblano pepper. Chicken, mushroom, potato, hondashi, fresh ginger, rice wine vinegar, garlic.

“Ask not what the soup can do for you, but what you can do for your soup”. One of the few times rice wine vinegar was available, so in it went. The fresh ginger made all the difference.

Made by Martin. Lots of flavor.

Chicken Dumpling Soup

Dumplings were hand-made with milk, flour, parsley flakes, and dried basil.

Spicy Peanut Chicken Soup

Standard mirepoix. Chicken, roasted eggplant, okra, red green and yellow bell pepper, asparagus, parsnip, peanut butter, coriander, cayenne pepper, garlic, cinnamon, curry powder, whipping cream, milk, lime juice.

Met Market packaged vegies are hit and miss. The parsnips in this soup were good–seasoned with rosemary, if a bit soft. But the prepared carrots and mirepoix taste weird. I think maybe they use vinegar or something else as a preservative. At any rate, by the time they get to us, they are acidic and stink. Go figure.

Adams Peanut Butter is good in soups. Others can be a bit too sugary.

Montezuma’s Chicken Mole Soup

Mirepoix: red, yellow, and white onion, carrot, green pepper. Black beans, corn, tomato (both fresh and canned), figs, jarred mole sauce, chicken breast and thigh, glace de poulet (roast chicken stock), sugar, garlic, salt

The lid on the mole sauce wouldn’t come off, so I had to knife through the top. To little avail, as the sauce had hardened at the bottom of the jar. Had to dig it out with a spoon. Oh well.
